Do it. The seemingly unending local storage is a beautiful thing. I'm rolling with a 128gb iPhone 6 right now.
This criticism is very much like most criticisms railed against Apple. "Why didn't you do what I wanted? Your products are terrible." They tend to be fairly selfish.
There are people out there that won't need more than 16gb of space. Most likely, it'll be all those folks that aren't very tech savvy to begin with and may never hit the ceiling. That being said, 16 is very low, particularly given the new iPhone 6s camera and ability to shoot 4k video (something the folks I mentioned earlier in this paragraph will likely never care to do).
Upping the next level to 64 is wonderful because it's more space than most people will ever need, and the giant boost in space does make it an appealing prospect for those tech savvy people.
While I understand your point of view, what you need to understand is that Apple isn't making devices for you, but for a much wider general demographic.
