Don't really know which one to get, which would be the most fun and have replay value at the same time? Both look really good though.

If your really looking for replay GH3 can't be beat, at least in my opinion.

If you've never played a Guitar Hero game before, I say go with Guitar Hero III. Maybe you should check the playlist out first, see if there are songs you'd enjoy in that game.
