Yoshi Story. It was a great game from what I remember (I was 8ish) but could beat it with all the best/hardest paths wtihout dying more than twice, and most of the challenges.
Hardest would have to be Super Mario RPG because of this one boss. It was like a dream guy or something like that I had Malo, Mario and Geno (Geno and Malo had their ultimates, Mario had a Offensive Koopa Shell, Malo had the uber defensive version). I had already beat the game and went back to kill him. He killed Mario and Geno within 10 minutes, then it took Malo (think that was his name, the Cloud guy) another HOUR of combat to kill him. Malo had the Koopa Shell so he would only take 1 damage a turn
Starfox 64. Even to my puny 6 year old brain when I first played it this game was a breeze but thats supposed to be beacsue you can beat it in 30 minutes or less. Thank god for its seemingly infinite replayability.

Yep, that's why I love the Starfox Francise, waiting for Starfox Wii
And easiest nintendo game was Mario Galaxy and Kirby's Adventure
Super Mario Bros., SMB 3, NSMB, and Galaxy were all easy( mostly). But it has alot to do with skill and the sharp and responsive controls that are Mario game trademarks(most Nintendo games really). And it's hard to care if these games are easy when you're having so much fun blowing through them.
The first game that comes to mind is Wind Waker but I think The New Super Mario Bros. was easier.TwilightSoilder
Windwakers hard! You always have to sneak around like a spy and if you get caught the pig throws you in the cell. Gannondorf was a pretty tough final boss.
Endless Ocean, but then again, the game wasn't about challenging the player. I enjoyed it for what it was.
The hardest game I ever played, Nintendo or otherwise, was F-Zero GX.
