I have a 720p TV that supports 480p, but for some reason my Wii won't let me select 480p from the menu.

Do you have Wii component cables?

I've tried using Component and S-Video.
It's greyed out on both.

Make sure everything is connected to the right socket, and not loose. If it still doesn't work, then IDK. Sorry

Oh well, it looks somewhat better with S-Video, even if it's outputting 480i there are no jagged edges.

False. The set needs to be able to handle Enhanced Definition (480p). There are older TV models that might have had component cables that only allow the benefit of the separation of the colors. So, technically if the set isn't HD or ED then attaching component cables will not do anything.

It will do something on a SDTV. It will make remove gray on the 480p selection. If you select it, though, you'll get an insane distorted output.
