Every HDTV makes the source video fit it's screen, yes, but the amount of pixels are dependent solely on the source material. Nintendo can get you 480p and that's it. Upscaling, which is done by hardware andnot the tv, would output a great resolution (say 720i or 720p) but it still wouldn't be nearly as smooth as if the game was originally designed to run at that resolution. Uscaling is, in a way, stretching video out to show on a higher resolution screen. Nothing beats a true HD source.
I hope that all makes sense, but somehow I doubt it...
EDIT: I just realized that I never really answered the question. What your TV does is pretty much stretch 480 pixels and make it a lot more pixels. The size is greater, but the resolution is not. Some TVs are better about this than others, but generally speaking the stretch doesn't suit lower resolution material (i.e. standard RF cable on an HDTV)
