They didn't. That was actually added on by the Irish because scotch whiskey had a bad reputation in the 1870's, so the Irish and Americans added on the "e" to distinguish their higher quality product from scottish whisky.

I would proberbly think the "legal age" is 18 but the real age is 11, 12
