Did it get deleted because it would've bumped the movie up to an R? Or did it get deleted because James Cameron thought it didn't fit?

I'm going to assume the latter. I bet it's like a 5 second scene where they hook their braids together, and it had to be deleted because it would raise weird questions involving the animals.
It's the same scene that's in the film if I'm not mistaken, they just only showed a few seconds of it in the theatrical release.
Cameron said that the directors cut is going to add about an hour and 15 minutes worth of new footage. We'll see a lot more character development, Earth's background story, etc.
