There's really nothing wrong with it unless a theist is doing it in an insincere way when they are losing an argument or if they are doing it in a condescending or passive-aggressive way, which admittedly is all too common.

I respond the same or I say thank you. Christianity is part of my cultural heritage so I tend to respect it.

It's the same when someone says Merry Christmas to someone who isn't a Christian. It's a courtesy thing and should be treated as such.
When you sneeze, your soul will escape the body.
So we respond with "God bless you" to stop the devil from acquiring it kind of like how Dora the Explore tells Swiper "no swipping!" of course this was well before the knowlegde of microscopic organisms.
Do peope still believe this? Of course not but we still say it out of courteousy because it has become a response so intrinsic with our culture. Even as an Atheist, I still say it. So my approach to "Godbless" or any other religious connotation is to respond in a manner consistent with their intention not it's literal definition.
If someone says "GodBless", they're simply wishing me well. Of course if they meant it cynically, I will adjust my response accordingly. . .

What's more important is what they mean by their words, than the words themselves. So, I just react the same way I would if I were religious.

Really doesn't bother me, ofc I'm more of an agnostic, but w/e. Same way that someone saying Merry Christmas, Happy Hannukah, Happy Holidays doesn't bother me in the slightest. They're all meant in good spirit so honestly, I see no reason to get worked up.
