That's fine if that's your preference. But personally, I care about the TASTE more than the color.
There's still plenty of flavor in a well done steak. I just dislike cutting into a steak and having it be mushy inside. it's really a moot point though since I rarelly ever eat steak. If I eat meat it's usually carne asada so the meat's really thin.
