My sleep has been terrible as of late.

He could have obstructive sleep apnea. Usually those patients present to the hospital because their partners complain they "snore a lot" and their sleep is "terrible". Obstructive sleep apnea could be fatal if you don't treat the underlying problem. Have him get checked asap.
Why do you feel the need to sleep together in the same bed? If he snores sleep somewhere else. A body pillow is usually pretty equivalent to a human minus the noises and sweat.
There's a lot of possible causes for your boyfriend's snoring and we can't really offer any help rather than tell you that he should consult a specialist...maybe he's sick, maybe he needs to lose weight, maybe it's something more serious...we can't just guess :)
That being said, until he gets himself checked you can always try something like ear plugs (I tried it when I still lived with my parents; my father snored so loudly you could hear it in the whole house...didn't work for me though, it just amplified my tinnitus and it was driving me insane =P)

My dad snored, it was terrible and he snored on the way in and on the way out, it was like listening to a fucking ogre in cave ( yeah, that powerful ), he was the reason why I shut close my bedroom´s door at night and even then I was still able to listen to him, I don´t understand how my mother managed to sleep with all that noise. So finally he passed away, it was so strange to have the house that quiet at night. My luck lasted several years until I ran out of it, cuz ..... my wife snores ! ( WTF !!!! ) but with her the problem isn´t that bad, most of the times all I need to do is to pull her pillow a little and the snoring stops.

That being said, no he's not obese. We're both physically active people.
I talked to him this morning and I think we found the cause. He said he's started eating late night snacks (I barely noticed), and ever since then he's been snoring. So now he's trying this thing where after 5 pm, he's going to refrain from eating.

Tell him to "put a sock in it" and literally put a rolled up sweaty gym sock in his mouth!

People don't realize this but snoring could lead to some serious late stage complications. If he is snoring so loud, there is a pretty good chance he suffers from some form of obstructive sleep apnea. If you guys have the money and time, I would suggest he go get sleep studies done, and have a doctor decide the appropriate remedy. Most cases of snoring can be successfully treated. If left untreated they can lead to pulmonary hypertension (a life threatening condition) later on in life. So my advice, get him checked out.

I twitch like a fish out of water in bed. I've hit my wife in the face a few times and even picked her body up and rolled her over, that's how bad my twitching has been. But there's nothing I can do to change it. Heck, I don't even know I'm doing it.

I turned over violently in my sleep and elbowed my girlfriend sqaure in the nose, i didnt even know i did it.

I've had some success with holding a pillow tight across someones face for about half an hour. :-\
Overweight people usually have snoring problems. Is he overweight? Are you? I usually notice overweight people have overweight partners. Anyhow, if you lose weight, get fit, start looking good, your likelihood of attracting a better partner go up and thus in order for him to remain your equal he'll need to follow, and thus may end up losing his snoring problem, and if not, you can always get a boyfriend upgrade. Either that, or if he keeps snoring then he'll need to get one of those machines that are really loud and that won't be any better.
