Do mistreated cows taste different than happy cows? If so, this is a serious issue and I'll put my support behind better treatment of cows.

Happy cows taste better than mistreated cows, yes.
Though the most important time is immediately prior to slaughter. Same thing with shooting game - you want to get it in one hit, unawares, so that there's no lactic acid coursing through the muscles or adrenaline or any other hormone spike. Otherwise it'll taste stronger and less pleasant.
The way they get around all that with cows is to quietly and calmly unload them from the trucks and move them through U shaped corridors so they can't see too many other cattle ahead of them. Sneak them into the plant and bam, captive bolt to the head, and out comes delicious meat.
edit - of course, the best beef is going to come from pasture-fed cows where the farmer physically walks the cow over to his barn and fires a bolt directly in its head. No undue stress, no suffering, just glorious, tender flesh.
