Big Orra - Iron Maiden, Orion - Metallica for instrumentals...those are my two favorite.
As for bands, Agalloch and Immortal...they have fairly long istrumental sections.
If you want Middle Eastern influenced metal then I highly recommend Melechesh and Orphaned Land. Apart from those two and a miscellany of folk metal, I've found that metal really isn't that diverse across the globe. It also depends whether you want metal with ethnic influences or just different styles of metal.

From Mexico:
Anabantha - kind of crappy band, but really popular over here, but i like how they mix some mexican sounds with gothic.
Fortaleza - Similar to Anabantha, but much better IMO.
El Cuervo de Poe - Good Gothic Band, mixing some local sounds, here and there.
Hada de Beng - A very cool band, not really an original sound, think about Epica, still, they are really good in their own stuff, now doubt one of the best Mexican Metal Bands.

I haven't heard the first one but I'm loving it. I wouldn't exactly call it avant-garde or expressionistic like those bands though. I also think Diablo Swing Orchestra are great but they are not the type of avant-garde I am talking about. I don't think having eclectic influences automatically makes you avant-garde.

That is my favorite Angizia song, it is a really old song, from 1997, and their type of music has been changing a lot since them.
Anyway, DSO, yeah, i don't see them that much as a "traditional" Avant Garde band (if that exist), but the fact that they are able to mix Swing and Metal is IMO a very strong reason to point them as Avant Garde as in "Anything can happen" music.
Again, I thank all of you for your recommendations, feel free to leave more, but I have plenty to go through now, (well Ill do it once I get better, cause I have some kind of head cold right now, for a little over a week, but I think Im starting to feel better, now just need my freaking ears to open up)

Sure, they have avant-garde elements in that sense, but I was talking about expressionistic avant-garde in particular. Neither of those could be considered that. Although I'm not trying to dispute the fact that they're avant-garde in the sense of having eclectic influences and experimenting with other genres. Transcending Bizarre? is another great band in a sort of similar sense to that.
