FF3 is supposed to be a bit dated I hear, but I havn't got round to playing it. I wasn't that struck on the FF4 remake myself, and that was supposed to be better. Rose Crystal? No that sounds like Tactics Advance :x. The first one that was re-released on PSP is where it's really at. The Gameboy/DS ones are a bit campy I heard, and meant to be nowhere near as good. FF: Tactics is quite mature for a JRPG.
Well, the theme doesn't really matter to me, if the game captures me. And FF doesn't. Turn Based, save every time you fought something, slaving your ass off to get different jobs..not my idea of fun.But if you slave your ass of you get to have Ninja's and Samurai's :(. Besides, the Black Mage's look awesome and you don't have to work very hard to have them. :P I quite liked the combat in tactics though. It was turn based, and it could be a bit a slow, but it was be quite fun maximising your moves and such. You could also have very different parties depending on how you develop your characters. It did take forever to level up, but it was satisfying when you did. I liked Tactics for it's story as well, and I usually don't in JRPG's. I suppose it just depends on your gaming taste though, and it's not as if JRPG's have been particularly good as of late.
