What the heck kind of terrible cordon bleu are you guys eating?

the kind where its chicken, flattened out, then stuff with ham and/or bacon and cheese, pan fried, then baked and served on some sort of sauce (often cream-based)

thats a cordon bleu last time I checked...

That is epic.

That's so epic I can't even think about it.

But I will say this: they need to make a chicken-on-chicken sandwich. Like, put a piece of chicken between the two pieces of chicken.

Those look like they came out of a box... and frying it is the lazy way to make up for not knowing how to cook a good chicken cordon bleu. You're also not eatting those with your hands, and with at least twice the chicken.

you dont deep fry it, but some pan frying is in order. Pan fry it, then stick it in the oven to finish it.

20 years of watching cooking shows, and 7 years working as a cook, and that is how Ive always seen it done.

Though I am open to new suggestions, so...do tell!

Probably more healthy then a BigMac at Mcdonalds. Thats 2 boneless chick breast. Fried bacon... thats probably been cooking so long that a lot of its fat is gone. And the cheese is probably the worst... Just order it without that.

KFC's chicken isn't pan fried. There are lots of good recipes out there on the net that don't involve deep or even frying the chicken.

You know how that chicken is cooked right? The fat isn't "gone" when you cook it like that. Quite the opposite.

Correction: it's bad because it's deep-fried at the KFC.

The old Lewis Black joke applies. MTV is to Music as KFC is to Chicken. Music and chicken are good, but not on MTV, or at KFC.

actually the irony in deep frying is that it isnt that bad.

Well, it can be

the unknown factor is the batter/breading.

If you take something liek shrimp, dunk it in a nice batter, and fry it...it will be extremely high in fat. This is because the batter soaks up oil.

However, duck confit, is lower in fat. This is because they take duck and cook it in oil without a batter.

Fried foods cook through steaming: the oil is so hot it causes whatever available water in the food to boil, thus cooking the food. So if you take a piece of chicken and put a light (or no) coating on it, it really wont be that terrible for you.

To conclude, the only added fat on batterless fried foods is merely whatever is on the surface (which isnt too much compared to sauteing it), whereas battered foods are higher in fat. Especially if its a porous, crusty batter like breadcrumbs or tempura
