Adventures of the Galaxy Rangers. US produced cartoon with Japanese animators/style (kinda like Thundercats or Silverhawks). Fairly high-concept sci-fi for a kids show. Also, people actually got shot and killed in this show, which when I was young was a plus because the cheesyness of stuff like Gi-Joe annoyed me.
Many of the others mentioned here are awesome (Batman:TAS, Young Justice, etc) but they don't qualify as cartoons I "enjoyed while growing up".

I grew up without Cable TV, so it was the basic after-school cartoons for me.
My favorite TV show as kid was definitely Saint Seiya or Knights of the Zodiac, that damn show marked my life, i just love it so much, it was the first time an Anime really hit me...honestly Saint Seiya >>> DBZ.
I also love Animaniacs, even today they are still so damn funny.
Batman the Animated Series was also really good.
Last but not least, i'll go with 2 all time classics, The Looney Tunes and Tom & Jerry.

@crimsonbrute: I always feel old when I hear someone saying "What I enjoyed the most about my childhood was..." and then proceed to mention something that I feel it happened only 2 or 3 years ago like all these people saying "Avatar"...that's from 2005! =P
