Personally, I could take a cheetah. They have poor peripheral vision, so I'd sneak up on them from the sides. I'd jump on top and put them in a headlock, so as to neutralize those powerful jaws. They also couldn't reach me with their dangerous claws while I'm up there. As for the kill, cheetahs have hollow bones, so my finishing move would be to snap the neck. It would be a quick, painless kill.
