When you are at a 3 hour practice for any strenuous sport, be it football, soccer, or ultimate frisbee (the last is what I do), your saliva often becomes significantly more viscous than it normally would be, and if you swallow it, a fair amount gets caught in your throat (not a whole lot, but enough for it to be noticeable), thus somewhat restricting breathing and, therefore, lowering performance and endurance. As a result, I spit.
