I have a single Msi GTX 460 Hawk 1gb and am currently using one Asus 1080p monitor. I just found another monitor on craigslist really cheap and was wondering if my 460 could run 2 monitors.

Yes but 2 is the max.

This, it can run 2 in desktop mode, not sure if it can span a games accross both, but I don't think you'd want to do that with 2 monitors and have a bezel running down the middle anyway.
