Which of these 3 gets the more interesting quests?

By interesting I mean more backstory, tougher decisions, etc.?

None, I really can't remember a single thing about the side-quests, so that means they sucked, really bad.

So imo they all are the same, it's up to you, they don't really have much of a story and they are extremely short, something like go there, kill a few geth, find quest log, find another mission.

Though there isn't a whole lot of variation to it, I know that the Earthborn path has a run-in with a gang that Shepard used to run with back on Earth, dealing with releasing an imprisoned gang member. I believe the Colonist path involves a negotiation sidequest (i.e. "Don't jump, you've got lots to live for!" etc.) ...As for the Spacer sidequests, I'm drawing up a blank. They're all dialogue-only so far as I can remember, and they don't really affect the outcome of the game as a whole.

What Twistlock said. But since Mass Effect 2 will allow you to use saved games from the original, you should just go ahead and run them all for replay value.

They were likely pretty much the same. The Colonist side-quest involves convincing someone not to kill people / themselves. Unless you were planning on playing the game thrice through anyways, I wouldn't worry about the different side-quests. They're a little bonus depending on what story you chose - emphasis on little.
