Metro 2033 is a good one in that it looks amazing. If you want to push the hardware to it's limits, put the Witcher 2 on max settings and then turn on ubersampling.
Well I can run pretty much everything on max (even with mods) with my single GTX 570 so I doubt you find anything to really push your setup to it's limits. Modded Crysis, Oblivion and GTA4 look fantastic, also Witcher 2 or Crysis 2 on max

Crysis 2 DX11, Metro 2033, Witcher 2, Shogun 2, Dirt 3. That should get you startedferret-gamerDirt 3 was mindblowing in the videos, Witcher looks great and haven't dug too deep into the others but I definitely will

Overkill bud, by the time you actually need 2 gtx 580's for gaming, they will be half the price or have a single card just as good. I have a nice rig myself but just 1 580 have another slot in the MB if another is ever needed for sli, but it would take alot more then one game to go waste 500 more on another card that is just not needed. Unless you just like wasting money.
