A good brand 650w can handle two 5850's. I'm not entirely positive on this, but isn't Newegg generally a bit cheaper than tigerdirect? I just found this RAM which is roughly what you've selected, but for $50 cheaper,http://www.newegg.com/Product/Product.aspx?Item=N82E16820145260. I'd stick with Windows 7 pro as well, pro has features you'll use, ultimate doesn't, home lacks a few.
Yep, check Newegg for everything. They are a more reliable company I have found, even though the use UPS (which likes to leave $1000 dollars worth of system parts on my doorstep. grrr!!!). The CM690 Advanced II is a really nice looking case, and any of the PSU's from Corsair are very reliable. I have the 620HX in all 3 of my systems. Pay the extra $20 dollars or so for the 965 125W version over the 955 it seems to be well worth it from the reviews I have read as well.
When it comes to gaming I would go with the AMD over Intel. Sure, they may seems faster but not by a whole lot and especially with the price point. The i5 isn't comparable to the 965 in gaming speed and is only beat out by the most expensive of the i7's. Plus, some of those motherboards for an Intel system are in the $200 dollar price range. For GTA4, the i5 is slower then the 955 by about .3 fps.
One good rule of thumb is to get a psu that has more power than you will actually need. I would recommend the 850w, should be plenty, but if you can get something that has a little more power.

Lol, a half-decent 750W unit can handle two 5870's in CF with an overclocked quaddie. Why on Earth would the OP need an 850W PSU?
