Most of the games you listed, I don't find very fun nor did I think they were very good. Of course, my opinion will vary from others.

- Battlefield - never really good to begin with. I though Call of Duty and Call of Duty 2 were decent games, but since CoD2 the series has been downhill and lackluster
- Crysis - nice open sandbox-type world. The next entry removed the sandbox feel and simplified the game to cater more towards consoles. The series lost it's pzazz.
- Metro - were decent shooter games. They remind me a lot of the STALKER games since some team from the STALKER series did work on the game. I preferred the STALKER games over Metro, but I thought Metro was decent enough.
- Bioshock - eh....the first game was great up until the big letdown of the story right towards the end. I've got Bioshock 2 still in it's wrapper and I haven't bothered with Infinite.
- DA:O - this was a good game. I enjoyed the controls, the story and the RPG elements. I puked in my mouth a little when I tried DA2 and I won't touch Inquisition. This series was ground up, spat out and then shit on, if you ask me.
- Witcher - first game, some of the most boring and easy combat. I only played through for the story. I put a few hours into the second game, but I just couldn't get into it. The intro when you're running from the dragon and you have to hit the keys at the right time to dodge - I don't like these things in games. If I wanted to play time the button pressing just right, I'd play me some Parappa the Rapper.
- Elder Scrolls - Morrowind was amazing. Oblivion was a garbage dump and Skyrim was an improvement, so the dump now looks like a messy trash can knocked on the floor. Skyrim has shown to be more entertaining over Oblivion.
- Fallout - 1 & 2 were great. 3 is a bastardized version of the original Fallout game - it lacked the wit and strategy, was buggy and a slap in the face to the original games. As a FPS, it was fairly decent. New Vegas was an improvement over 3, but neither were good enough to get me to spend money on Fallout 4

Adventure games - have you not heard of Telltale? They make great adventure games. Walking Dead, Back to the Future (this one is a little old, but still awesome).
MMO - these aren't really games. They're just mindless grinds.
Strategy - I haven't really played much of an actual strategy game since Company of Heroes. The most recent one would be Total War: Shogun 2. So I can't really comment on strategy games.
As others have suggested, perhaps you're not looking hard enough for games. Some of the more interesting and fun to play games I've come across are not big AAA titles from companies that are really good at screwing the pooch. I play a lot of games co-op with my little brother, here are some that we've had a blast playing:
- Broforce
- Divinity: Original Sin
- Sniper Elite 2 & 3
- Tower Wars
- Torchlight II
- Saints Row 3 & 4
- Terraria
We're currently working on Dying Light - which is more fun with co-op over single player. Yes, it's a fairly well known game, but it's still entertaining.
For single player games, here's what I've been playing recently:
- Pillars of Eternity
- Defense Grid 2
- Lichdom: Battlemage
- Dragon's Dogma: Dark Arisen
It's all personal perspective. Also, I think if you're waiting for some well known publisher to drop some awe inspiring AAA title for a new IP anytime soon, you're either going to be waiting a long time or sorely disappointed with what they offer.
