I'd go with the HD2900 series over the 8800GTS cards right now. System RAM, 2GB should be just fine, although the days of 4GB of RAM are not too far off.
With that ine mind though, there's a lot of things going on right now. At the very least I'd wait for the X38 chipset, but there's also Penryn, Nvidia's upcoming cards, ATI's die shrink, AMD's upcoming Phenoms, and a whole lot more. It's impossible to honestly say what the best thing is going to be, or if anything (beyond the X38 chipset) is worth the wait - but with as much as it looks like you're willing to spend, a few months might be prudent.
You should wait till ATI and Nvidia launch their new cards. ATi's offering should be launching in November and Nvidia's in the end of this month. It will be real interesting to see how well The RV670 and 8800GT perform.
