I would go with 2 x 1 GB RAM to be sure that Dual Channel is working. Losing that will impact performance, and frankly, 2GB is good enough for most uses - especially if you are running XP.
But perhaps I misunderstood your question...

It won't be 3x1gb it's 2gbx1+1gbx1

Actually i think its better to run 3 x 1GB because you're running tri channels but you do use up more space.
Memory bandwidth is a huge bottelneck for a fast CPU. That is why dual channel was invented :D
So by my book, 2 x 1GB (and thereby paired RAM) will be much better than having 3GB (1+2) - but check your motherboard manual to see if that configuration is supported.
BTW - Vista runs well bith 2 GB.

I don't have 64 bit, but on 64 bit you would have 4GB useable RAM. On 32 bit, you would only have about 3GB useable RAM (depending on your hardware).
