Should I update fallout NV on steam ?

I havent updated since thursday of last week and have just had alot of crashes when trying to load my game. And if I am up to date than how can I fix these crashes

It will update whenever there's one ready unless you set it not to do so. It will keep being buggy until the community starts patching it, it's a bethesda game after all.
