Some games I'm considering playing are Morrowind and Baldur's Gate.

Well OP, both of those games are pretty fantastic. They really don't make good RPGs like that anymore.

I'd recommend playing Gothic 1 and 2, Deus Ex and Vampire: The Masquerade - Bloodlines. For a recent title I'd also recommend Risen, which really harkens back to the old school role playing tradition.

Of the games I just mentioned I'd say Deus Ex is probably the best. The original Deus Ex, as far as exploration goes, is probably one of the finest games ever made.

Baldur's Gate I has good exploration, it's actually encouraged that you explore more to find a lot of the hidden stuff. I recommend that you get all of them though off GOG.com and apply the BGT mod. This is the best mod there is, besides a ton of bugfixes & graphical enhancements, it makes the entire Baldur's Gate franchise into one, long continuous game.

I wouldn't recommend Morrowind, it's an incredibly dead game populated by Wikipedia bots. Unless you heavily mod it, ofcourse, then it is worth playing. Instead, i recommend the superior Gothic 2: Gold Edition. Far better exploration due to more atmospheric sound effects, better wildlife, better environments, infinitely superior AI.

I would go with Baldurs gate and Oblivion. The elder scrolls morrowind and oblivion are pretty good! Plus, you could mod them afterwords!

Morrowind, BG, and Gothic II are must-plays. Morrowind is my favorite game to explore (the last TES game with substantial content to find from exploration), but the Gothic games are incredibly interesting to explore to.

TES II: daggerfall keep in mnd that this game is masochistically hard and dungeons can take weeks to navigate properly due to main of them being massive open chambers the size of whole villages. im serious here the game is.. madness. also the leveling system is ultra slow and one can simply toss the main quest out the window (no essential npc's (IE you can kill main quest npc's and do your own thang)). also unlike modern rpg's quests have timers, faliure to complete them on time causes them to expire.

its also the only game of its genere that lets you climb anything, sail ships, and manage finances in a banking system with loans interest and investments.

Wow, thanks for all the replies.  I'm actually playing through Dragon Age: Origins now.  I'm really loving it, though as someone said, the exploration isn't great.

I think I'll try Baldur's Gate first.  Should I go for the Enhanced Edition or the original?  How does the difficulty compare to Dragon Age?  I'm finding DA pretty easy my first run through.  I never seem to use potions and the only things I buy are backpacks.  I am playing on normal difficulty though. :/

Get the original from GoG, download the high-rez mod, and you're set.

DA is kind of like the "special needs" cousin of BG.

BG EE is 20$, for that exact price you can buy both Baldur's Gate I & II + all the expansions off GOG.com, apply the simple to add, yet gigantic in features mod i wrote about above, and have a much better experience than EE can currently provide. Your call tho, it's your money/time.

Oh, you need potions and a little strategic thinking in BG, it's usually harder, but it can be an easy game if you turn the difficulty to easy.

Baldurs gate 1&2 + the expansions... Icewind dale 1&2 + expansions and planescape torment are really the best rpgs the pc has ever had tbfh... mod them so you can play them at high rez (i run them windowed aswel to make the visuals even sharper) and they still look great.   After playing these games every other rpg looks so bad in comparison...including dragon age.   So glad that via kickstarter there will be more rpgs like these classics soon and with the success those will no doubt have we may see even more in the future.
