I really liked the Baldur's Gate games and Icewind Dale games were good, too. I really liked the first Neverwinter Nights - the second one was ok. I also liked the first Kights of the Old Republic and the second one was ok. I'd say that those were my most favorite and entertaining RPG games.
Fallout series, Arcanum, Baldur's Gate series w/tutu mod, Elder Scrolls III & IV, KotOR series. Planescape: Torment, Vampire:Bloodlines, Icewind Dale series, Dungeon Siege series, Diablo series, Gothic series, Sacred series are also supposed to be good. (Although some of those are action RPG's) For DOS retro fun, I recommend Dungeon Master & Bard's Tale I,II,&III.
The Witcher, Mass Effect, Fallout 3, Oblivionare my favorite newer CRPGs.
Otherwise, the Baldur's Gate, Diablo, Fallout, Icewind Dale series will fill your time up nicely... and make it so you don't have time for anything else at all.
The only good PC RPG exclusives I can name is Fallout 1 & 2, the Witcher and NWN, Baldurs Gate was dead to me but many people liked it, I would put it in the hack n slash genre though along with Diablo but I would say Diablo is more of an RPG then Baldurs Gate.
If I could pick 5 RPGs and only have those to play for a year, I would be happy with these: Deus Ex, Planescape Torment, Morrowind, The Witcher EE, Titan Quest
