Ok so I plan on overclocking my CPU from 2.8 to 3.1 which has been confirmed by many people as completely possible and doable. I also plan on OCing my HD3850 which already runs very hot and will run even hotter after OC.

My PC currently has 3 fans. 1 on the front, 1 on the side and 1 on the back

Which would keep my PC cooler? Leaving the side cover or completely removing it leaving me with one less fan but with fresh air from the outside? Or would it not matter at all?

Oh by the way, Im poor so dont go suggesting to get watercooling :)

Your question too subjective and has too many variables for anyone to give you an answer, especially without knowing which case you have, what fans are they, which are intake or outtake, and how many fans (if any) does your PSU have, and which of those are intake and outtake. You almost never want to remove the side case. The point of the fans is to move a fixed amount of air in and out. Leaving the side case open disperses the air alot, including the cool air meant to cool the hot components. Think about this: What do most people do when they have a really hot piece of food and they want to eat it? They usually blow on it. They could just leave it exposed to colder air but that takes longer. The lesson here is that its better to put focused cold air on hot regions rather than exposing it to larger, but passive air. If anything, try it out yourself. It will only take a few minutes by checking the temperature difference in the BIOS.

DUST anyone? Make sure you avoid dust in the cage by not leaving the panel off the side etc and getting good filters on your fans. Try keeping the heating out of the room you are in. A cooler room is a cooler computer. I have only one fan on my PC at the back and it is a large fan spining slowly which sucks air from the front which is filtered. Dust is a killer.
