While royalty may be the best class to choose for beginners, don't expect choosing that class will make Demon's Souls a walk in the park. Every class I would say is good. The classes all have their perks, but Demon's Souls will be hard no matter what way you start it.
royal and temple knight are considered the best when going for certain builds for pvp (which you probably shouldn't worry about until you understand the game better).
royals make the game relatively easy for new players.
Picking a class only determines your starting equipment, stats, and I think you get a spell with certain classes too. You shape your character whatever way you see fit after the start by stat assignment. You can always change up your character by grinding for souls to increase certain stats and therefore enable the use of other weps, armor, etc..
Royalty is the easiest by a mile if you turn it into a nuker, but for the most fun and to play the game to the fullest I recomment soldier. I started with a soldier and played with a thief and royalty through the game afterwards, but soldier was by far the most enjoyable. Melee combat has more interaction, skill, sneaking, you get a sword, shield and a spear making it very versatile and it never gets boring. It's very strong too once you get some good weapons.
I used the soldier class. I haven't had a chance to explore the other classes, but you start with a spear and a shield, which is a good way to ease into combat.
