I'm trying to get to level 50 in Red Dead Redemption, and I want to know if my online experience will carry over to my next PS3, which I'll be getting in a week's time. Just so I know if I hurry up or not :)

If you log on to the same PSN account, then it will.

It should do.

I got the YLOD a couple of months ago, and realised when I signed in and started playing MW2, all my stats were there for the online. Save data for campaign and profile settings is lost though.

But there's a little file on the PS3 that says "multiplayer profile"... Are you sure? Don't I need that file?

Some games you do need the file for example... COD, Demon's soul need the save file to acquire your stats. But... Then games like Killzone2, MAG, Street Fighter don't.

You don't need it on COD or any other multiplayer game to my knowledge... Demon's soul is not a MP game.

I have heard issues with transferring Demon's Soul, but it not being a MP game I do not think this pertains to you.

I also agree, from what I know you don't need this for multiplayer games. I transferred my data to a new PS3 slim and all my onlinestats transferred over accordingly.
