This is the problem with hack 'n' slash games. Like JRPG's, you either love them or hate them.
Personally this is one of my favourite game franchises, the epicness coupled with rewarding feeling of defeating a boss or completing a puzzleand visual beauty really do it for me. I find the combat fun but it's somewhat simplistic. People who say it's not button mashing are wrong, or playing on easy mode. The game requires combos although there's not many of them, not huge depth in the combat system.
To answer your question, probably not. The combat is supposed to be the most improved part of the game (I haven't bought it yet) but I don't think this will change your mind about the game. Just like I'm sure FFXIII is a good game, I just dislike RPG's so I know that it won't be the game for me and I probably wouldn't enjoy playing it.
I agree. GOW III is the best hack/slash on the market right now... and is the only one this gen to push the genre forward since last gen. But if you don't like hack & slash, I'm not sure there's anything here to change your mind. Unless you just want to play for the story. But if that's all you're playing for... you'd really want to play the first two games to get the most of it. Lol, and I don't think you'd want to sit through two games of a genre you don't like.
Try the demo. Just know that the full game is at least 10x better b/c the demo doesn't have any puzzles, story, or much variety whereas the real game does. BUT... if you don't enjoy the core gameplay of the demo, I don't think you'll enjoy the full game.
However... I disagree with you on FF XIII. I think you might still like it even though you don't generally like jrpg's. Only b/c it's VERY different from most rpg's. It's ALMOST like an action game w/ rpg conventions... maybe worth at least a rent if you're unsure about it. If you can sink an hour or two into though, you might find that you like it.
