The best televisions out there don't all support 1080p. Developers know this and take it into consideration when making the game. You won't get the best experience if you only have 720p and the game can do 1080p. I also think that some games just aren't good enough to look at at that high a resolution so they just take it down a notch.
Your TV has a native resolution of 1280x720. There are no 1080i LCD TVs, only CRT (tube) TVs can natively display in that mode. Your LCD will accept a 1080i signal (1920x1080 interlaced), but it still downsamples the image to 1280x720, so giving it 1080i will not improve the picture much. The PS3 and Xbox may tell you that the signal is getting output to the TV at 1080i, but the TV is still running at 720p. You are better off providing a progressive image (720p) instead of a higher resolution, interlaced one (1080i).
Also, for TVs under 50 inches, most people can't see the difference between a 1080p model and a 720p one. So if your TV is under that size, then 720p will be just fine.
Also, about those blades of grass you mention. Computer graphics are inherently jagged. Objects are rendered to a fixed square grid, so any object at an angle can look like steps on a staircase. And the larger the screen, the more apparent the jaggies are, even at 1080p.
So game developers employ anti-aliasing, essentially blurring the edges of objects, or even the entire screen. Or in the case of Killzone 2, they anti-alias in a way to simulate the depth of field found in camera lenses, so that the blur is based on how far ahead or behind the character an object is. So the edges of grass you see were probably intentionally blurred, and will not appear much sharper on a 1080p display.
As stated above, there is no such thing as a 1080i LCD. It is going to be either 720p or 1080p, and for yours, sounds like 720p. The TV can take 1080i inputs, but before displaying it, your TV is going to convert it back to 720p since that is your TVs native resolution. All TVs "display" only 1 resolution, and this is the TVs native resolution.
The only TVs that are natively 1080i will be a CRT TV, which you really can't even find anymore in HD. This is also why I believe that if you leave both 1080i and 720p checked out your PS3 compatible resolutions, games will tend to go to 720p just because they know most HDTVs now a days are either 720p or 1080p natively.

My advice is don't force the ps3 to upconvert using software. Your TV has it's own hardware converter and will convert it to 1080p before technically displaying it.
Also, since you have a sony TV, it has a game mode, make sure you have game mode turned on for that hdmi port.
