I had a similiar problem after upgrading to 2.0.
Go to your Settings (if it freezes at anytime give it 5-10 mins to unfreeze) then make your way to 'Restore Default Settings' and everything should be okay.

I had the same problem as you. It froze on me once upon changing display settings, once randomly at the dashboard, and once as I was quitting Uncharted. I have the 80gig model, and this happened to me after I updated to 2.0. I restored my PS3 settings completely to default and resetup everything and ever since I haven't ran into a single hiccup.
Also, I hear from some of my friends that the chances of freezing goes up when you try playing videos in formats which the PS3 doesn't support. That sounds crazy I know, but just a thought. But in any case, restore everything and see if that helps.

Check the bottom of your PS3. Also, like I told you mine froze several times after the recent update. But it doesn't freeze anymore that I restored everything. I totally restored EVERYTHING including game saves and all that....not just display settings and whatnot. It sounds like a big deal I know, but after I did this I never ran into any other problems....in fact I believe it's more responsive than before.
The PS3 really is bulletproof.
