Are the PS3 network capabilities any good? Because I've heard that alot of games aren't online...and another thing, PS3 has WiFi right? Thanks.

Games: Most 3rd party aren't online. Those that are tend to be very very slick compared to Live. WiFi: Yes on the premium version.

The two good games I have experience with are Resistance and Motorstorm. Both game's online are great. There a few complaints about Motorstorm, but it is mainly the lack of options and stuff just thrown in without much thought. But, once you start playing, it is always lag free and has great gameplay. Resistance is much better, online-wise. You are matched up very quickly and it to is lag free. Yes, the 60gb PS3 does have Wi-Fi.

There is no official Sony headsets. I would do some research before purchasing one plus headsets are almost non existent in most game. Some don't even support it and if they do it hardly works.

You will be lucky to find players that use the headset. Some times you do and sometimes you don't. The problem is the headset is not standard so most don't bother getting one.
