Oh man, there's so many. Other than the obvious ones (MGS, spyro, crash bandicoot, FF 7, 8 & 9) I loved Tomba!, Digimon, Little Big Adventure and Ape Escape. They all bring back great childhood memories, I loved those games and still do.
Hmmm...it's so hard to both remember & decide. I was so young back then that my tastes changed considerably in 5 years I owned & played my PS1. At varying times, my favorite games were:
Ape Escape and Super Puzzle Fighter II Turbo were also favorites.... and I kinda have a soft spot for Duke Nukem Time to Kill. There's a few others, but overall, FF7 is my favorite.
