I just recently made a thread how good this game is but I'll say it again because it truely is one of the best PS3 titles out. Modnation Racers. Try the Sly Collection, it's a lot of fun and not too difficult. The first game especially is awesome, I didn't want to put the controller down for that.
I have to agree with two of the above posts. Little Big Planet and especially Wipeout HD are very fun titles. I'm more into Wipeout right now since LBP is best played with at least one other person, and Wipeout was part of the welcome back program so I've only had it for a couple of weeks. I also suggest Red Faction Guerrilla and The Saboteur. Both games are really over the top and are pretty much made for the fun factor.
Hunted: The Demon's Forge was a super fan game. It is probably my favorite game I have played so far this year. And also to Vanquish is awesome so is Demon's Souls
