Simple when it no longer is profitable for sony to continue selling them.
However as long as people continue to buy them they will continue to sell.
They will stop selling the ps2 when the ps2 stops selling.

You are correct.
It probably has 2-3 more years to go, as long as JRPG's are made for it and quality ones at that, it will sell.
The decline of PS2 will happen when companies/developers who are focusing on PS2 RPG market mainly move up to PS3, which I'm anticipating as soon as FFXIII is released.
Fear not, PS2 had a great life span and it will still continue to bring profit for few more years.

For those without new-gen consoles, Star Wars: The Force Unleased, will probably be the PS2's last good selling game. I Think that Sony will see how well the PS2 does this next Christmas, then if it doesn't do well, they'll stop production.

The only games I see coming out for the PS2 are movie games (latest was Iron Man I think).

When the ps3 succeeds. The longer the ps2 stays, the more dmg it does to the ps3. It's that simple. Who knew MS decision to force developers to develop for the 360 would pay off.
Actually the more the PS3 sells the less PS2 does, thanks to backwards compatability.
