Probably the final boss Kefka in FFVI, Ex-Death, Sephiroth of course, Omega Weapon in VIII mainly because I felt so satisfied when I killed him. I probably have more but I can't think of them right now :?
 The most memorable boss for me would either have to be killing the final boss of Final Fantasy Mystic Quest or Defeting The Ultima Weapon in Final Fantasy 3. The reason behing the Ultima weapon being memorable is because I was using Mog durring that fight, aswell as Shadow and Lock and Terra if I do remember myself, and mog used a dance move where he sucks the enemy into the ground killing it instantly, now, i know that this isnt suppose to happen because it doesn't work on bosses but I sware on my life that It did work.
Yeah cool guys i think i have to agree with the weapons from ff7 as i found sephiroth and omega really easy for some reason but bloody ruby weapon....I cried tears of joy!!!
But when i fought sephiroth and he did his weird comet skill move where it goes all around the galaxy he used it so much that i survived and he ran out of mana!!! haha he couldnt do jack! that was so funny!
those 3 turks from ffVII rude it was and that girl with blond hair and reno when you enter midgar again for the second time its a very fast fight and sephiroth when you can kil him with omnislash was a fun fight but ruby and emerald where tough ones.
Yeah wedge and biggs rock tho man!!! i found emerald a lot more threatening than ruby for some reason i found him much harder! am i the only one who had no problem beating omega at all he was such a panzy!!!!

Omega Weapon from VIII, you serious?!
Omega Weapon on FFX was a joke, I think that fight actually took me less then 10 seconds to beat him. Then all those other Omega Weapons or whatever those were went down easy too.
I actually quite like Rufus in FF7 it was so exhilirating and yeah the XMatom345 or whatever its called in ff8 is good altho i went back and killed it so i didnt get the cool FMV!!!!

You still benefit a lot from defeating it in battle though.
Seymour was really bad in my opion just some forgetablle camp dude with silly hair!!! Although he did give me a lot of trouble in his Chariot thing on the cliffs!!!
I'd have to say the most memorable one would definitely have to be Kefka from Final Fantasy VI. It was really fun, not to mention emotional (especially for a freakin' SNES game). But my favorite one was every single battle with Kuja in Final Fantasy IX. He may looks like a girl...but some of his moves are badass, and his final trance form kicks arse, yes arse.

And once you get alot of extra spehere you can really get high levels on stregth and stuff.
bosses i though were cool just to look at were the likes of ultima Weapon in FF7 and Sephiroth , Ultimecias GF in the last battle of 8 was badass, and at the time i didnt knew i would get him as an Aeon i thought Anima looked cool. As for bossed i remember just because they were so satisfying to beat id have to go for Omega Weapon from VIII. some people have said ruby weapon but to be honest once you had the strategy it was just a case of miming the same attack so it wasnt really challenging. FF8 gave me the most challenge boss wise with Omega Weapon and Ultimecia.
