Although I obviously haven't had TF2 long enough to be sure, I think that game will keep many people coming back for years to come. User created content is kind of cheating, though.
online games like COD and Gears never get boring. For some reason i haven't been able to put down Assassins Creed yet, i think i'll get the acheivements and the game'll be finito for me.
Mother 2 and 3 (aka earthbound and earthbound 2) never bored me the whole way through. Partly because they kept it a desent 20 so hours long but also because they didn't have to strech anything out due to that time strain like other RPGs do.
Warcraft 3 was always fun online. If I didn't lose my CD key, I would still be playing it.
Super smash bros melee. There's just so many ways to play the game, If I ever get bored with it, it will be long after brawl is out.
