Quite a few actually:

Assassin's Creed - Didn't really like it at first but then found it "bearable" when I upgraded my PC. My thoughts on the game didn't change much since I still found it a tad bit boring but I really enjoyed the end part of the game and it made me appreciate Assassin's Creed II.

The Legend of Zelda: Majora's Mask - Didn't get far into the VC version on the Wii but really enjoyed it once I got the 3DS version.

The Legend of Zelda: Spirit Tracks - Had this game since the DS days but never really liked it. Started playing it again around 2 weeks ago and now I'm almost done. Glad I decided to give this another shot.

Dark souls. Originally got it when for my 360 during my culinary schooling days and just could not get it, I played for about 15 hours then sold it. I didn't understand the game, but I noticed a few months later it was on sale on Xbox for 5 bucks so I picked it up again. Now I am loving it, my buddy who finished all the Souls titles helped me with some knowledge of the games and boom it is pretty fantastic.

Actually going through it now, Alien Isolation. I got about a little less then halfway through the first time. Decided to come back after watching a friend play it. Glad I did. It's so fun. At first I was thrown off by the amount of padding, and stealth. Also to be honest it scared me too much at times. And I love horror games. But now I'm taking it for what it is. And it's great. I'll have to man up and get through the terrifying cat and mouse stalking sequences.

Bloodborne, felt impossible at first phase of the game and frustrating.

After a few weeks of not playing it Now I can't stop playing.

Deus Ex. I though the first couple missions sucked but when I decided to give the game another chance I couldn't stop playing.

On the other hand I gave FFVIII a second chance and......................

It still sucked.

Never needed to give a game another chance, I finish them the first time and if I like it then great but if not....ah well.

Another game is Lost Odyssey. I played a bit when it came out and it didn't stick with me. Bought it years later and it ended up being a top 360 game.

KOTOR.

I tried a few times but could never get into it. It wasn't the type of games I was used to. Years later I decided to stick with it and ended up loving it, played through it many times since.
