I haven't played Demon Soulds yet so I can't judge.On the other hand sofar I've enjoyed Witcher, Mass Effect 1,2, Dragon Age Origins, FallOut 3 and Persona 3 FES and Persona 4.
Demon's Souls stands out for gameplay, reply value and atmosphere. Visually the game is average, who told yo demon's souls gets all the praise for its graphics?Maybe the best TEH GRAFIX console RPG but suggesting it being anymore is IMO a failure statement.

I want to play Demon's Souls so bad just because of the hype, but I'm getting tired of fantasy themes. I'll import it for sure soon though.
So far for me:
ME2 > Fallout 3 > Mass Effect > Lost Odyssey > Tales of Vesperia > Oblivion > Dragon Age > Fable 2
I couldn't really get into the Witcher, only got past the castle/keep area. Didn't run too well on my PC either, so I'll give it another go when I upgrade my PC. And I've only played the 360 version of Dragon Age. Also I haven't played too much of it, so I'm sure it will go up in the list when I finish a few other games & give it a go again. I also have Eternal Sonata unopened, but I bought that for $20 AU, & it got rated fairly well so I'll save it for a rainy day/week after I've finished all my other games, I have no expectations for it because I know almost nothing about it, but it was so cheap & got good scores, so it could be great.
I think RPGs need to take a break from fantasy & try different themes, like Sci-Fi. Mass Effect & KotoR have proven just how awesome they are. Or Steampunk! The last great Steampunk game I can remember was Arcanum. Imagine a Bioware or Bethesda game with a Steampunk setting!? *drool*
