They compete with the Wii as secondary to each other. Xbox 360 tries to compete with it more than the PS3 though, what with the Xbox 360 having the ability to pump out these arcade and DD games at a fairly good rate.
They probably do, but probably see each other as their main competition, because beating the Wii would only mean getting larger sales, but wouldnt bring in much more 3rd party support or games that are not already heading to the 360/PS3. Most of the Wii's biggest titles are by nintendo, both MS and Sony would have no chance of getting these games. While beating each other they would gain more games, look at the 360 for example because of its sales it was able to get games like DMC4, AC6, GTA, etc...
