I agree with you on FFVI (probably my choice for best RPG of all time), but I also think FFVII is fantastic. FFVIII was extremely good too, but it was probably the first Final Fantasy that really ushered us into what the FFs are now; up until VIII (and to a lesser degree, VII), all the FFs were fairly similar in gameplay and even not too different in setting. FFVI was, in my opinion, the apex of the traditional JRPG, as it did an excellent job with random battles, and the setting was still close to the "medieval" setting that the JRPGs of the time, but with a twist. Not that this is a knock against the current FFs, but they're much glossier and more futuristic than they used to be, which is why I consider them to be from a different era (not to mention the fact that Uematsu and Sakaguchi no longer work on them).
Anyway, I digress. There are plenty of awesome JRPGs out there, and FFVIII is definitely one of them, but there's at least 3 RPGs I can think of on the SNES alone that eclipse it, in my opinion.
Uematsu doesn't directly work for Square anymore, but he still produces music for their games.
Well, he executive produced music for SSBB on the Wii, as well, but the big difference is that he's not composing all the music for the FF games anymore; his soundtrack for FFVI is incredible, and his contribution to Final Fantasy is missed.
