XBOX360 has better graphics with smoother frame rate and this is natural, because it has better graphics card.
PS3 has only a stronger CPU but the graphics doesn't depend much in the power of CPU rather than the power of GPU.

Also I don't know about you, but Gears doesn't really compete with Killzone 2 or Uncharted, so this whole argument is pretty moot when PS3 currently has the best graphics in their games. ;)
