I know on Paper GC had better graphics than PS2, But What Games Proved That?

Resident Evil 4 proved it. Compare the two games and see.

Resident Evil Outbreak compared to REbirth is another good comparison.

Besides that, I can almost gaurentee other multiplats looked better on the GC.

I fail to see how Factor Five has surpassed Subsistence with Rebel Strike.

This, however:

i've heard that the gc wrestling games were the best in every way (inlcuding graphics)

for me wind waker was amazing graphically
