If you really don't need an HD, go for it. Just make sure it's one of those that sport an HDMI port - those are newer, and are much more likely to have the falcon chip and improved heatsink for the GPU, which should at least make it considerably less likely that you'll get RRoD'd

Come to think of it, would the absence of a hard drive lower the operating temperature of the system? Hard drives can get pretty warm.
If you're not getting XBL then it doesn't matter. If you do plan to go online in the future then get one with an HDD.
Also, I believe 360's hardware problems are due to its overheating GPU, so an external HDD like the on in the 360 wouldn't have much of an influence on its performance.

If you didn't want to play online or download demos, would the Arcade model suit your purposes?
Well, three things: The HDD is more cost effective than a memory card (though the arcade certainly isn't AS much of a rip as the old core models); it's also needed if you wish to play original Xbox games; and in at least certain games, it can reduce load times.
