For example, wing commander 3 apparently wasn't published by EA, nor was the older first few command and conquer games.

No, but EA does own the license and publishes the re-releases. It's like calling Eidos published Tomb Raider games (from TR Classic to Underworld) Square Enix games, which again, is now technically true.

Well you never mentioned anything before the year 2000, so you might wanna throw yourself into the teen category lol.

There was also an early 90's game called Syndicate and I think it was an EA game. It was developed by Bullfrog, no less.

It wasn't my cup of tea back then. But, it was highly regarded that year. I think it's free on Origin right now.
