Wii hit an untapped market. PS2 was a worthy upgrade from the PSX.

And that's a market Sony wants to get on as well (hence Move). PS2 was a worthy upgrade, but the Gamecube was more powrful than the PS2. If, by your logic, console buyers want to get the best of the best, why did Gamecube fail? It's not about graphics.
Sony is not going to risk another colossal, expensive failure when they're already bleeding money. Why would any company push out an incredibly powerful system, sell it at a loss to be price competitive, and try to compete when the developers and the rest of the competition are doing perfectly fine with less-powerful hardware.
The wii market is a big risk, as it is unsure whether or not it is a sustainable market. There's no proof or evidence to show that everybody, and every bar, that went out and bought a wii for wii bowling are going to invest again. The wiis success was a one off thing, I think. It is very silly for MS to seek this market. It paid off a little this gen I suppose, but just like Nintendos move with the wii, it is walking a fine line with the loyal fanbase.
Sony knows this, which is why Move was marketed more as a "in addition to" as opposed to where the brand is going. Sony played it safe with the move. The returning game market still prefer core games, as they are the people loyal to the games industry.
And to the other thing you said: bringing up the gamecube makes no sense. All three of those consoles were a worthy step up from the prior generation.
I brought up the Gamecube because I was trying to show that more powerful doesn't always equal sales. Yes, they were a step up from previous gen, but so is the Wii U and the rumored NextBox. I think you're underestimating them. Wii to Wii U is going to be more than a full generational leap, and while NextBox won't be quite as significant, it will still be a sizable jump. The market will have fairly powerful consoles. If Sony goes more powerful, it doesn't mean many consumers are going to jump on it for the graphics. If anything, the PS4 could be 2x/3x more powerful than Nextbox/Wii U. People are not necessarily going to flock to that, just as hardly anyone flocked to the Gamecube, despite it being far more powerful than the PS2. Power hardly matters. It's a risky venture for Sony.
