Well,you obviously can´t disable the actual client main updates(not a big issue bandwith wise,most of them are only a few megs anyway) but like I said,many of those are related to the beta stuff so to disable that just go to "steam/settings/beta participation" and change it to opt out of all beta programs,and for the games themselves just right click on the game in your library and then go to "properties/updates" and disable it for that specific game.
