Resident Evil 4's iron maidens come close actually. You can destroy their arms and legs, and I think upper half of their head, and they wriggle at you - if you are close enough they leap for your throat - i'f i remember correctly i think their tounge grabs you. Then the limbs regrow. Memory of it is a little hazy though.
With these topice asking which is the goriest game? Manhunt is the goriest nuuff said.:)

For me ManHunt most violents moments were psychological, and while the game is really, really gorie, it doesn't shock me as much as the psychological aspect.
